Made my first vegan lasagna today and OMG, was it amazing! I made my own tomato sauce w/ tons of mushrooms and then a tofu-ricotta which I was a little hesitant to try (it came out really good!)... added some whole wheat lasagna noodles, spinach, soy mozzarella and you have:
My hubby even had seconds! I really can't believe how great it was! I never thought this was going to be a good substitute for my beloved "real" lasagna! I'm just ecstatic!! Wooooo Hooooooooo!!!!
I didn't get to make the ww bread I was planning to, but I will definitely do it tomorrow! I also bought a big head of savoy cabbage ... anyone have good recipes for that??
